I’ve found Summer in a glass and it’s this sparkling grapefruit cocktail.
When it comes to Summer, I really don’t like to drink anything too heavy. Beer makes me bloated, I love cider but it makes me burp a lot, and I can’t do frozen drinks at all. It’s a real struggle. But when I found the brand Truly I was absolutely smitten. I drink sparkling water a lot when I’m at work, so why wouldn’t I absolutely love a spiked version?! Truly was nice enough to send over an arrangement of flavors for the team and I to try out.
I’ve been having a lot of fun lately sharing new outfits on the blog. One thing that I aimed to do this season was to try new trends. I tend to stick to the classics, and in turn my wardrobe starts to all look the same. After stepping out of my comfort zone for this off-the-shoulder midi dress that I recently shared, I figured I would give another trend a try this week. This shortcake recipe is quick, easy, and delicious! The perfect dessert to celebrate the 4th of July.
With the 4th of July quickly approaching, I always try to share something on the blog that you could make at home for your gatherings, parties, cookouts… Whatever it may be! Last year I shared this festive fruit pizza, and there was even this cobbler way back in the day.
Red, White, And Blue Shortcake Recipe With Cream Cheese
Box of yellow cake
1 (8 ounce) package cream cheese, cold
1 cup granulated white sugar
⅛ teaspoon salt
1 teaspoon vanilla extract
1½ cups heavy whipping cream or heavy cream
½ packet of vanilla instant pudding
Start by preparing the cake as stated on the box
For the icing, in a large bowl, whip cream with a mixer until it forms stiff peaks.
In another bowl, use a hand mixer to soften the cream cheese, about 30 seconds.
Add sugar, salt, instant pudding and vanilla to the cream cheese and whip until fully combined and creamy. Check a small bit between your fingers to insure sugar crystals have "melted" into the mixture so there is no grittiness.
Fold whipped cream into cream cheese mixture then use mixer until it's fully combined and fluffy.
Chill the cake overnight, then split into 4 layers.
Assemble by adding blueberries, strawberries, and frosting in between each layer and onto top.
Chill for another 30 minutes before serving.
In general shortcake is pretty easy to make, but this shortcake recipe is unusual because it’s using a cream cheese frosting instead of whipped cream. What was supposed to be just a fix for me since I don’t like whipped cream, turned into a huge hit with everyone! Cream cheese for the win! What will you be serving up this Independence Day? Have you heard of the fiddle leaf fig, or the ficus lyrata rather? This plant has taken the world by storm, very deservingly so as I have never seen a fiddle leaf fig look bad or out of place. I have a funny fiddle leaf fig saga of my own, as it literally took me 4 months to find this little baby… His name is Theo. (And yes, it’s a baby. I couldn’t find a tall boy!) When we were decorating the Lt Grey offices I knew I wanted a fiddle leaf fig. In fact, I wanted one so badly that I even posted about it on Facebook, asking my friends and family to keep an eye out for one. I mean come on, this baby is adorable and comes in handy for styling photos.
