Strawberry & Veggie Dairy Free Cream Cheese

I’ve been trying really hard to eat more breakfast. It starts your day off so much better, and will keep your metabolism going all day. I recently shared my favorite indulgent breakfast recipe, but wanted to share a healthier option that I’ve been eating lately. Other then yummy smoothie bowls, bagels with cream cheese are one of my favorite breakfast combos!

One of my personal resolutions was to eat a lot less dairy. Dairy really messes my body up, especially since I’ve been diagnosed with IBS. Any little thing helps in the long run, and this dairy free cream cheese tastes indulgent, yet doesn’t make my stomach instantly turn.

Strawberry Dairy Free Cream Cheese

  • Silk Yogurt in Strawberry
  • 1 cup raw cashews
  • 1 tbsp apple cider vinegar
  • 2 tbsp fresh lemon juice
  • 1 tsp sugar

I’m going to start by explaining the process of making dairy free cream cheese. The key is the cashews. Be sure your cashews have soaked for several hours, or ideally, overnight. The longer they soak, the creamier your cream cheese will be. After soaking, drain and rinse the cashews.

Once you have rinsed, combine cashews, yogurt, and sugar into a food processor. Start to process to break up the cashews. You’ll need to stop the food processor and scrape down the sides frequently to keep it mixing. Once smooth, add the vinegar and lemon juice. Pulse for an extra 3 seconds. Set your dairy free cream cheese in an airtight container and store in the fridge. It will thicken slightly as it sits in the fridge and gets cold. You could eat it right away, but I promise it’s better cold.

Veggie Dairy Free Cream Cheese

  • 1 1/2 cups raw cashews
  • 1 tbsp apple cider vinegar
  • 2 tbsp fresh lemon juice
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 2-3 tbsp Silk Almondmilk, Unsweetened Vanilla 
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill

Start by soaking your cashews in the same method as stated above. Just like with the strawberry dairy free cream cheese, the longer they soak, the creamier your cream cheese will be. Add the soaked cashews, vinegar, lemon juice, salt, onion powder, paprika, and garlic powder to a food processor. Once smoothed (which can take up to 5 minutes), slowly add the Silk Almondmilk. This will create the smoother texture. Remove from the processor, add stir in the parsley and dill. Again, set your dairy free cream cheese in an airtight container and store in the fridge. It will thicken slightly as it sits in the fridge and gets cold. You could eat it right away, but I promise it’s better cold.

As you can see, I like to get creative and top it off with some delicious fruits and veggies. For the strawberry dairy free cream cheese, I went for strawberries, honey and bananas, and cinnamon granola. These are truly my favorite combos that I can’t get enough of! When I want a savory option, I go for a little dill, avocados and radishes, or chopped carrot with chives and parsley. Blueberries, prosciutto, or even salmon would be great options too.
