I’ve been combining tons of ingredients for overnight oats to get out the door in the mornings a little quicker. Not to mention, this recipe is included in my diet! (Aren’t diets just the worst?!)

With the upcoming holidays, I was trying to think of a way to make this feel a little bit more fall. And no, it’s not pumpkin spiced. But what’s the next best thing? The combination of gingerbread and chai, duh! Chai lattes are a new favorite of mine, and when I saw this, I knew I could come up with something delicious! What do you think?

Gingerbread Chai Overnight Oats

Ingredients

  • 2 cups oats
  • 2 cups almond milk
  • 1/4 cup chia seeds
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons maple syrup (healthier if it’s 100% pure)
  • 2 scoops of chocolate protein powder

Instructions

  1. Mix ingredients together in a large bowl, except for your topping
  2. Stir well and cover
  3. Refrigerate overnight
  4. Serve with cacao nibs, strawberries, or powdered sugar on top!
