Today I have a simple question for you; Do you meal prep? It’s a concept that’s been in the spotlight for awhile now, but I’m just now getting around to adopting it. To be honest, I’m more of a fan of going out when we can. But, I’m on more of budget these days so meal prepping it was.

If you asked me two months ago about meal prepping, I would have laughed and kept walking. My friends and family know that I am the queen of eating out, especially with the busy busy schedule that I live by. But, I’m now a huge advocate for meal prepping. I spend 2 or so hours every week and have a full week of meals prepared. It’s kind of crazy! I know my trainer Jess and friend Alia would be so proud of me right now, haha! If there’s been one thing to completely revolutionize meal prepping it’s the new Rubbermaid® Brilliance™ products. Keep reading to find out what I prep, simple tips and tricks and all about what’s made me motivated to keep going!

It all started with quinoa. Remember when I shared with you this recipe? Ever since then I’ve been obsessed with this little grain. With meal prepping I start by making a large serving of quinoa. Our family opts for this instead of things like pasta, mashed potatoes, etc. This large batch lasts me throughout the week, and I usually plan my prepping around that. So, I want to share with you what, why, when I prep..

The Ingredients

  • Shrimp –  This is a quick, low calorie option to keep on-hand at all times. To prepare ahead of time, simply peel and devein. When you’re ready to eat just throw them in a sauté pan with some EVOO, salt, and pepper. Yum!
  • Turkey Meatballs – Ground turkey has been my choice lately when it comes to protein. I still go by this recipe to make delicious turkey meatballs for lunch or dinner.
  • Sweet Peppers  – Simply pre-chop any pepper variation to keep on hand.
  • Onions – I put onions in like, everything. BUT, be careful because chopped onions can attract bacteria very easily. I chop them because I know that I use them about everyday. If you don’t, I’d leave this until the day of.
  • Mushrooms – I keep Baby Bellas in my fridge basically at all times. Harrison and I both like them raw or cooked.
  • Kale Mix – This can be any type of greens, really. It should be a fact that if a salad is prepped and prepared ahead of time, the more likely it is to be eaten.
  • Bertolli® – Lastly, keep your favorite sauces on hand. We both love this Bertolli® Tomato Basil, as well as the brand’s Creamy Basil Alfredo.

A Meal Prepping Necessity

Now I want to talk about my new Rubbermaid® Brilliance™ 10-piece set for a second. To say that it’s changed my eating habits for good would be an understatement. This product is a new innovation that launched at Walmart back in October. I was looking for a set that would help me get through the week, but everything on the shelves were plastic and didn’t look very premium. I don’t know about you, but opening my fridge and my lunch box to seeing prettily packaged meals makes me pretty excited to get cooking/eating. This might be cheesy, but I’ve listed out for you all of the reasons why I love them so much, besides just looking pretty like I said.

  • 100% leak-proof guaranteed
  • Stackable features keep food storage from taking up too much space in the fridge.
  • Microwave safe + splatter-proof.
  • Easy leftovers reheating.
  • Crystal clear and stain resistant.
  • Crystal clear design makes it easy to reach into the fridge and see what you need.
  • Stacking, space saving design.

Takeaways For Meal Prepping

For those of you who are thinking about trying this method, here are a few suggestions for sticking with it. First off, choose one day/night and stick to that. We meal prep every Sunday afternoon. It’s what works for us… Which leads me to my next point, decide whether you want to do it alone or as a team effort. I know a lot of friends who look at meal prepping as a therapeutic time to themselves. That’s fine! For me, I prefer to do it with Harrison. It’s kind of like bonding time.

Next, create a mood. This might sound dumb, but it’s going to take being mentally prepared to look and cut food for two+ hours. We put on a little music, and even pour a glass of beer or wine. This makes it fun! Lastly, invest in what’s going to help you commit. For me, it was our new Rubbermaid® Brilliance™ set. For some it could be organic groceries, a new cookbook, etc. You could also visit this hub, where other bloggers share their meal prepping ideas too!

Here’s a little look at one of our meals from our prep. It’s quinoa with sautéed shrimp, mushrooms and peppers. Top it off with Bertolli® Tomato Basil sauce and green onions and you have a delicious, healthy meal! So, now that this post is over I’ll ask again… Do you meal prep? Putting together a ‘guide’ to meal prepping has been on my to-do list for awhile now. I’m excited that I finally got to share this new experience with you!

I’ve been desperately needing to save money, and therefore have been trying to plan my meals ahead (usually only the day before, though) and it’s a complete game changer! I also didn’t know onions attracted bacteria that fast – so lesson learned! Definitely need to try this yummy recipe!
