You know what I love? A delicious pasta recipe full of vegetables, protein and good oils. That’s what I call some comfort food – without all of the added calories. You could also easily meal prep this pasta recipe, then portion it out throughout the week for lunch and dinner. I’m trying to start to pack my lunch more often, and recipes like this make that super easy.

Tomato, Spinach & Chicken Bow-Tie Pasta
 
Ingredients
  • 1 Box of Bow-Tie Pasta
  • ¼ cup sun-dried tomatoes
  • 2 tablespoons high quality olive oil
  • ½ pound boneless skinless chicken thighs
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon salt
  • 4 roma tomatoes, chopped
  • ¼ cup fresh basil leaves, chopped
  • 8 oz fresh spinach
  • 3 garlic cloves, chopped
  • salt
Instructions
  1. Add chopped sun-dried tomatoes and 2 tablespoons of olive oil, to a large skillet, on medium-low heat. Next add chopped chicken, red pepper flakes, and salt over all of the ingredients in the skillet, and cook on medium heat until chicken is cooked through and no longer pink center, or about 5 minutes.
  2. Place the chopped tomatoes, chopped fresh basil leaves, fresh spinach, and chopped garlic into the skillet with chicken, cook on medium heat about 3- 5 minutes until spinach wilts just a little, and tomatoes release some of their juices.
  3. Remove from heat. Taste, and add more salt to taste, if needed.
  4. Cover with lid and keep off heat.
  5. Cook pasta according to package instructions, until al dente.
  6. Drain, and add to the skillet with the chicken and vegetables.
  7. Reheat on low heat, and mix everything together.
  8. Remove from heat.
  9. Top with shredded parmesan, if desired, and enjoy!

When serving, you can also add more olive oil to combine more. Another option is using the oils from the sun dried tomatoes, which adds another flavor level that is undeniable! Yum, yum, yum!
